    A very special wheat from the wonderful Woodstock Farm in Berrigan New South Wales, where their longer summer contributes to higher protein levels for great bread making.

    Woodstock Flour describe ‘Spitfire as a ‘typical bread wheat with great extensibility and oven spring’. It mills to a lovely fine, golden flour. Perfect for bread, pasta and pizza.

    The Congdon family have been growing Spitfire on their organic farm for several years now. It’s a variety that yields well, even in dry conditions.

    As always, increase your hydration level if you’re switching from white flour to wholegrain in your baking. Might take a little while to get used to it, but you’ll be rewarded with exceptional flavour, good oils and wonderful nutritional qualities.
