Purple Straw Wheat Grain

The grain has been carefully stored in our freezer - no chemicals used in the growing, harvesting or storage of the grain, so this is the safest way to ensure it stays fresh and weevil free.
An heirloom variety rediscovered. Tania and Steve from Burrum Biodynamics started with very small quantities of seed from the Genebank in Horsham. They have carefully selected and nurtured a whole range of Purple Straw varieties to produce this grain.
Technically a biscuit flour, Purple Straw Wheat also bakes into a lovely cake with good structure, crumb and a wonderful nutty taste from the high bran content. You can choose to sift it lightly for pastries and piecrusts, or use it as is, for more texture and flavour. Makes a superb shortbread.
In America, crop production ceased in the 1970’s and 80’s when new hybrid varieties out-competed Purple Straw in the market. The lightness of the flour remains, producing the distinctive baking qualities that make Purple Straw Wheat worth exploring.
