Hot Scotch Landrace Wheat Flour

A new flour is always exciting. This one is particularly special. Meet Hot Scotch Landrace Wheat. A genetically diverse blend of wheat from the Burrum Biodynamics Heritage Grain Trials.

 

Starting in 2020 with a handful of each variety from the Genebank in Horsham, Tania and Steve (Burrum Biodynamics) have carefully selected the best varieties from their Heritage Grain Trials.

It was a long wait, but finally in 2024, we had enough Yecora and Purple Straw Wheat to mill. This year, the very best of the remaining grains were combined into Hot Scotch Landrace. Named in honour of John Reid, this is a blend of 1051 Purple Abyssinian, 1052 Purple Grain, 1053 Purple Kernel, Triticum aethiopicum and AUS Wheat.

 

Landrace wheats are locally adapted, genetically diverse populations of wheat. Historically, they evolved through traditional farming practices and selection by local farmers. The blend naturally varies from season to season in response to soil conditions, weather and farming methods. Hot Scotch Landrace will evolve over time as these factors influence the growth, selection, and preservation of certain biological traits over others.

 

Dark, interesting with a gorgeous depth of flavour and a rich sweetness. Reminiscent of rye, it’s unlike anything we’ve tried. We're still discovering the unique qualities of this special flour. A fabulous challenge! Watch it carefully, it can overprove quickly. Love to hear about your adventures with it.
