Khorasan Wheat Flour

An ancient grain rediscovered
Khorasan wheat, like emmer/farro, einkorn, and spelt, is an ancient variety of wheat - largely unchanged by breeding over the last several hundred years. The kernel is unusually large compared to other wheat varieties.
Khorasan wheat is believed to be a hybrid of durum and Triticum polonicum. It likely originated in the Khorasan region of Iran, and it traveled to the U.S. from Egypt with an airman returning home after WWII. A few decades later, Bob Quinn began cultivating Khorasan and trademarked it as Kamut®, which is now more widely known in the US.
Mills to a lovely golden flour, with a coarse texture.
